Eggplant & Feta Penne Pasta

250g Penne Pasta
1pcs Red Onion
1pcs Eggplant
1pcs Garlic Clove
1pcs Red Chilli
400g Tinned Diced Tomatoes
40g Kalamata Olives
15g Parsley
50g Feta

1tbsp Olive Oil
1tsp White Sugar

Method

Step 1
Fill a saucepan with plenty of water, add a pinch of salt and bring to the boil. Add penne pasta and cook for 10 minutes or until al dente, stirring occasionally. Drain in a colander and set aside.

While the pasta is cooking, heat the olive oil in frying pan over medium heat. Add the onion and cook stirring consistently for about 1 minute. Add the eggplant and cook for a further 15 minutes or until it is soft, stirring occasionally. Add the garlic and the chili (to your liking), stir to combi

Add cooked penne pasta to eggplant sauce and stir to combine. Take pan off heat and add olives, chopped parsley and crumbled feta and gently combine. Season with salt and freshly ground black pepper to serve.
