Beef and Plum Stir-fry

Serves 2

1 cup Rice
150 ml Plum Sauce
300 g Lean Beef Strips
100 g Green Beans, topped and tailed
1 Carrot, peeled and sliced thinly
1/4 cup Currants
2 Eschallots, ends removed and sliced thinly

1 tsp Hot English Mustard
100 ml Water
1 tbsp Olive Oil

Method

Step 1
Fill a saucepan with plenty of water and bring to the boil over high heat. Add rice and a pinch of salt and cook for 10-12 minutes or until rice is tender. Drain in a colander, wash under cold running water to remove any starch and set aside.

Step 2
Meanwhile, combine the plum sauce, mustard and water in a bowl and stir to combine. Heat olive oil in a frying pan over medium-high heat. Add beef strips and cook for 2-3 minutes until evenly browned. Add green beans and carrots and cook for a further 1 minute. Turn down heat to low, add the sauce and cook for 1 minute. Then, add the currants and eschallots and cook for a further minute.

Step 3
Serve Plum Stir-fry over rice and season with salt and freshly ground black pepper to taste.
