Coconut Mango Cashew Chicken

400 g Diced Chicken Breast
4 tbsp Mango Chutney
165 ml Coconut Milk (Light)
100 g Green Beans, topped, tailed & cut in half
1 Sweet Potato, peeled and cut into matchsticks
15 g Cashews, chopped

Method

Step 1
Pre-heat oven to 180℃. Add sweet potato to a baking tray, spray with oil and bake for 20 mins.

Step 2
Heat a frying pan to medium and add chicken breast. Seal both sides of breast for 2 mins each side. Add coconut cream and mango chutney to frying pan and stir. Turn down heat and simmer for 10 mins. Then add the green beans and cook for another 5 mins.

Step 3
Serve chicken breast with sweet potato and beans and sprinkle over cashews.
